This salad provides 2 portions of your 5 a day, some calcium from the cheese and the walnuts are an excellent source of omega 3, this is an essential nutrient we need to eat more of.

 

 

Method:

  • Toast the halloumi in a frying pan over a medium heat until nicely browned (or even better a ridged griddle) no need to add oil, remove and toast the walnuts watching carefully so they do not burn, they will only take a few minutes.
  • Empty the spinach and rocket into a serving bowl, arrange halloumi and orange on top and dot the lime wedges around the edges.
  • Mix the dressing ingredients together and serve alongside the salad
